Joey and I have been on a cooking kick lately. We try to cook  a few meals on Sunday and freeze them for weeknight dinners, because I hate having to come home from work and cook.  It’s been working quite well, and we have actually stumbled upon some pretty good recipes.  One of our favorite dishes is spinach lasagna rolls.

You can check out the full recipe from Skinny Taste, but here is the Cliff Notes version.  Set the oven to 350 degrees Fahrenheit. Lay lasagna noodles flat on a piece of wax paper. Ladle a mixture of ricotta, spinach, egg, and Parmesan on top of the noodles.

Then roll them up and top off with tomato sauce and mozzarella cheese. Put them in a baking dish and cover with foil. Then pop them in the oven for 40 minutes.

This is such a delicious meal and makes a perfect weeknight dinner.
